Olive oil has a lower smoke point and may create free radicals while cooking, making it more suited for low-temperature cooking. 

When little heat is required, such as when preparing salad dressings or dipping sauces, olive oil shines. Each oil has different health advantages depending on how it is cooked or prepared.
